Instructions

Prepare the Cottage Cheese Flatbread Base:

  1. In a large mixing bowl, separate eggs, whisking the whites and yolks together until well combined.
  2. Add cottage cheese, olive oil, salt, dried herbs, black pepper, and parmesan (if using). Whisk thoroughly until a smooth, consistent batter forms.
  3. Let the mixture sit for 5 minutes to allow flavors to meld and cottage cheese to integrate.

Craft the Cottage Cheese Flatbread:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Pour the egg and cottage cheese mixture onto the parchment paper, spreading it evenly to create a thin, even layer about 1/4-inch thick.
