2 tbsp extra virgin olive oil
Flaky sea salt
Cracked black pepper
1 cup diced ham, preferably honey-glazed or smoked
2 medium ripe tomatoes, thinly sliced
1/4 cup grated mozzarella cheese (optional)
Instructions
Prepare the Cottage Cheese Flatbread Base:
- In a large mixing bowl, separate eggs, whisking the whites and yolks together until well combined.
- Add cottage cheese, olive oil, salt, dried herbs, black pepper, and parmesan (if using). Whisk thoroughly until a smooth, consistent batter forms.
- Let the mixture sit for 5 minutes to allow flavors to meld and cottage cheese to integrate.
Craft the Cottage Cheese Flatbread:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Pour the egg and cottage cheese mixture onto the parchment paper, spreading it evenly to create a thin, even layer about 1/4-inch thick.
- Spread additional cottage cheese across the flatbread, leaving a small border.
- Carefully layer thinly sliced tomatoes and diced ham. Sprinkle minced garlic and fresh herbs.
- If using, sprinkle grated mozzarella. Drizzle with olive oil, sprinkle flaky sea salt and cracked black pepper.
Craft the Cottage Cheese Flatbread:
- Bake for 15-18 minutes until edges are golden brown, tomatoes are slightly roasted, and ham is crispy.
Notes
Cooked cottage cheese flatbread recipe can be stored in an airtight container for 2-3 days.
Reheat in oven at 350°F for 5-7 minutes to restore crispness.
Avoid microwaving, as it can make the egg-based flatbread rubbery.
